I made it, I ate it: Spaghetti Squash Part 1

As a recent college grad living by myself, I am solely responsible for what is in the refrigerator. Meaning, every leftovers container is mine, I never have to share a carton of milk, or be upset what I have my heart set on something in the fridge, and the roommate eats the last bite. I also am solely responsible for what is in the refrigerator. Meaning, if its empty, its empty. When the milk is gone, I have to go to the store, and if there is nothing around for a delicious dinner, its my own dang fault.

As I explore the kitchen and start learning how to cook, I try to read lots of different cooking articles. I love the food network (I’m watching Diners, Drive-ins, and Dives right now), I get the Hungry Girl emails every day, and am not a picky eater.

Last week I went a little crazy at the grocery store and picked up a spaghetti squash. However, I had never cooked one! After a few days, I realized I was not going to eat it before it went bad, opps! So when I had some free time after work, I sliced the squash in half lengthwise, scooped out the seeds, and placed the halves flesh side down in 2 casseroles dishes with water in them. After about 30 minutes, I pulled them from the oven (I think the temp was 400?) And once they cooled, I started shredding and placing in tupperware. As I said, I wasn’t going to have time to eat it, so I froze the portions.

It really looked like spaghetti! And when I was shredding I stole a few bites, and it tasted pretty good! Plain, with clearly some need for fixing up for recipes. But there was potential.

Tonight I tried to keep it simple. I let the squash defrost, and then eventually microwaved it and threw some salt, pepper, and a little blue cheese for taste. The first bites were amazing! I was loving how the cheese melted a little, and was comparing it to grown up macaroni and cheese. Then I got a phone call, and when I returned to my dish, the remains had cooled, and suddenly there was a lot of water in the dish. Now I’m disappointed with the results.

But I have not given up on the Spaghetti Squash. There are still 2 more containers in my freezer, so there will be a few more attempts! Hopefully next time I’ll have some pictures to share!
